TURTLES WITH ALMONDS AND SALT FLOWER CARAMEL

Ingredients :
- 300 g (2/3 lb) of dark chocolate 70 % cut into pieces
- 36 whole almonds with the skin
- 80 ml (1/3 cup) CARAMELS FAA salted caramel, cold
- 10 ml (2 tsp) of fleur de sel
Instructions :
1. In a double boiler, melt the chocolate.
2. On a baking sheet lined with parchment paper, form twelve small circles of melted chocolate using about 15 ml (1 tbsp) of chocolate for each one. Immediately place three almonds on each circle of chocolate to form the Turtles' legs. Lightly press the almonds so that they adhere well to the chocolate. Refrigerate for 15 minutes.
3. Spread the caramel over the almonds. Refrigerate again for 10 minutes.
4. If necessary, melt the remaining chocolate again in the bain-marie. Cover the Turtles with the remaining melted chocolate, then sprinkle with fleur de sel. Refrigerate until ready to serve.
