CARAMEL PIE WITH MAPLE SYRUP AND MAPLE BACON JERKY

Ingredients :

- 310 ml (1 1/4 cup) CARAMELS FAA maple syrup caramel
- 1 beaten egg
- 80 ml (1/3 cup) all-purpose flour
- 30 ml (2 tbsp) cornstarch
- 5 ml (1 tsp) vanilla extract
- 125 ml (1/2 cup) 35% cooking cream
- 125 ml (1/2 cup) maple syrup
- 60 ml (1/4 cup) melted salted butter
- 300 g (2/3 lb) of pie dough
- 6 slices of bacon

Preparation :

1. Preheat oven to 190°C (375°F).

2. In a bowl, mix 250 ml (1 cup) of caramel with the egg, flour, cornstarch, vanilla, cream, maple syrup and melted butter.
On a lightly floured surface, roll out the pie dough into a 12-inch (30 cm) diameter circle.

3. Place the pastry in a 23 cm (9 in) deep pie dish, then pour the caramel mixture over the pastry. Bake for 30 minutes.

4. Reduce oven temperature to 350°F (180°C), then continue baking for 20 to 25 minutes, until filling is set. Remove from oven and let cool on a wire rack. Refrigerate for 1 hour.

5. Preheat the oven to 180°C (350°F).

6. In a microwave-safe bowl, place the remaining caramel. Microwave for 10 to 20 seconds, until it is more fluid.

7. Brush both sides of the bacon slices with a little caramel, then place them on a baking sheet lined with parchment paper.

8. Bake for 15 to 17 minutes, turning the slices and brushing them with the remaining caramel several times during cooking, until caramelized. Remove from the oven and let cool.

9. When ready to serve, crumble the caramelized bacon over the pie.
