SWEET AND SALTY PANCAKES WITH BACON AND MAPLE SYRUP CARAMEL

Portions : 12 pancakes
Ingredients :
- 12 slices of pre-cooked bacon
- 430 ml (1 3/4 cups) of 2% milk
- 2 eggs
- 5 ml (1 tsp) vanilla extract
- 2 jars of CARAMELS FAA maple syrup caramel, 315 g each
- 15 ml (1 tbsp) melted butter
- 500 ml (2 cups) all-purpose flour
- 15 ml (1 tbsp) baking powder
- 5 ml (1 tsp) baking soda
- 2 pinches of salt
- 15 ml (1 tbsp) canola oil
Instructions :
1. Reheat bacon slices according to package directions. Chop five slices and cut remaining slices into pieces.
2. In a bowl, whisk the milk with the eggs, vanilla, 80 ml (1/3 cup) of caramel and the butter.
3. In a separate bowl, mix the flour with the baking powder, baking soda and salt.
4. Gradually add the wet ingredients to the dry ingredients and stir until combined. Add the chopped bacon slices and stir.
5. In a frying pan, heat a little oil over medium heat. Pour about 60 ml (1/4 cup) of batter into the pan. Cook for 1 to 2 minutes, until bubbles form on the surface. Flip the pancake and cook for 1 to 2 minutes. Repeat with the remaining batter to make twelve pancakes.
6. Meanwhile, mix the remaining caramel with the bacon pieces in a saucepan. Bring to a boil.
7. Serve the pancakes with the maple caramel and bacon.
